Let's say you walk into a bar and see a beautiful girl standing at the bar waiting to make an order. You walk up to her and say "You're so beautiful." And she replies, "I know, but I like that you told me." What would you think?

I like that confidence. I mean if she is gorgeous she's probably heard it a thousand times and knows it. What if she's a model, that means her job is to be beautiful.
Would you rather have her say "Me? But I'm so fat!"
No, but I think a "thank you" is sufficient, personally. A little modesty is the most attractive thing. If a girl responds like she did, it would make me almost want to take back the compliment. Conceitedness is not sexy.
the 2nd part of her response makes no sense...but dude she hears that 20 times a day. I too would get tired of that line reaaaallll fast.
by her response, she left the door open for you to match her arrogance with your own. She's an alpha looking for another alpha to run with.

now if she DEMANDED that everyone bowed down and worshipped her and thought that she was better than everyone else... THAT'S conceit.
Would think that her confidence is not that common but not a "wow" trait. So I would tell her that she is welcome and keep on giving her compliments. She is honest and confident. Honesty is hot.
Don't overdue the compliments though. You get too close, you'll get burnt. 2 or 3 is enough.
