Typically, it usually has to do with fat and muscle mass, bone structure, stupid trivial things like that, what really, and truly makes someone beautiful, is who they are on the inside.

Some of my female friends are truly beautiful people. From the day I met them, I thought they were angels dropped from heaven. They are soooo beautiful inside that I think this shines through and they are without fault (to me anyway) in their looks!

For men, the most handsome guy I know is short, fat, grey and balding - but has the most beautiful eyes I have ever seen in my life!!

Aesthetically, humans ARE generally drawn to symmetrical facial features, and any other attribute that may indicate 'good' genes/high chance of survival (females, now you know why men like boobs, if you didn't already).

On the emotional side, I personally like someone who has a similar mind to my own, or at least who understands me well. I like girls who are real, not superficial idiots, and who can have an intellectual conversation, also similar sense of humor (sarcastic/philosophical).
