In my country, whatever you think is your favourite meat is probably horse anyway.
From your list, deer, then lamb.
My favorite though is Kangaroo.
Other close runner ups are boar, alligator, shark, duck, ahi (japanese tuna) and lobster.
Oh, and bugs of course.
Sharks are almost tasteless. They are sold less than $1/lb here. Do you really like it??
Shark where I live is usually very expensive & rare to find and I think it tastes similar to halibut. It probablly depends where its from (I'm in Pacific NW, USA) Most fish varies depending where you are. When Ive been away from the ocean it sucks, when Ive been to Alaska, its the best.

You should try Ethiopian style injera's with sheep meat. Be warned, you will not want to share.

i like shrimp and fish too

Wild game is superior in my opinion. Homemade deer sausage is the best. Barely any fat, super lean and packed with flavor. Partridge and rabbit are also good, I usually take the breasts or meat and dice it up, soak in a brine solution for 8-12 hours and then cook in a crock pot or frying pan with Montreal chicken spice.
Beef. If I could only eat one meat product for the rest of my life, it'd be steak.
