I am an attractive 21 year old woman and I find this 55 year old man very attractive. Before I make a move on him, I was just wondering if unmarried men in their 50's would accept an invitation from a 21 year old to have sex - no strings attached.

I actually think a lot of older men wouldn't. I remember my barber, who's in his fifties, telling me that he's not attracted to younger women anymore and that sex with a younger woman wouldn't feel right. People change as they get older and don't find the same people attractive as they would when they were younger.
It all comes down to the individual. Treat him like you would any other person you're attracted to. Flirt and get to know each other, and see what happens.

I'd start by talking to him. Just general conversation. See how well you get along. You should be able to get a better idea of how he would react to your proposal.
