Is it normal to flatten an expensive steak??

I was at my in-laws home and they were going to BBQ some steaks. I was stoked because I love steak, and they had bought nice thick NY strips.

Then the atrocity occurred....my mother-in-law took out a meat mallet and beat the fucking steaks flat!! What?? I've...never...WHY?!?!?

Why would someone buy an expensive cut of meat and flatten it? If you're gonna do that just buy cubed steak or a cheap sirloin!! Instead of having a nice thick juicy steak, the fucking things were like shoeleather in appearance and texture. It tasted like shit compared to a properly prepared steak.

Is this normal, though?? It seems wildly stupid, wasteful and disgusting to me but I'm wondering if this is common??

    I can understand it to a point. If you flatten them somewhat, it can make the steak cook faster and more evenly, but the way you described it is atrocious.

    Next time this happens, take the hammer away, point at her with one finger, say "NO! Bad in-law!", then grab the steaks and run away to cook them properly.

    I am a chef student and that is a no-no for me. Meat goes to a process of mortification making it tender and more delish so I guess good cuts of meat are not to be flatten because they are supposed to be under cooked in the middle. You braise it so the juices stay inside and the cut stays tender.

    Have you never heard of tenderizing meat? They make a special tool for it and everything. I don't eat beef very often but I would say this is very normal, but perhaps not your preference.

    • Yes but good cuts of meat don't need tenderizing and I've never seen a NY strip flattened like a pancake before. I thought it was more normal to want a thick strip.

        Well obviously they do not know how to cook this cut of meat. Some people probably do not. You might be a good enough cook to know otherwise. so I would not blame them.
