We all know of girls that are shallow and date guys that are the perfect specimen (6 or 8-pack abs, muscles, fit and all that crap!) but is it normal for a girl to not be shallow?

The title is misleading.
Yes, it's normal for a girl to not be a shallow stereotype. It's actually preferred for many people.
I don't care for muscles. I like almost any body type. I've dated everything from very fit, to overweight, to underweight. I've dated long-haired dudes, short-haired dudes and dudes with "skater" hair. I've dated Hispanic guys, Italian guys, German guys, Irish guys, Dutch guys, etc. I've dated musicians, skaters, artists, and losers. I'm into how interesting a guy is, not always what they look like.
I don't care what a guy looks like at all. I don't look like a Victoria's Secret angel, so I don't expect him to look like a Calvin Klein model. I apologize on behalf of my gender for how shallow a lot of girls are.

I actually prefer the non-muscular men. Although I would like them to have enough to be able to lift me, if not then oh well I would love him no matter what. :)
But of course it's normal for a girl to be shallow and not shallow. Everybody is different.
If being shallow means wanting to have sex with someone you are physically attracted to then we're all shallow.
The only thing that really changes is that people have differences of opinion on what they feel is physically attractive.

I've always wondered myself. Some are obviously very shallow but others really have me scratching my head.
For instance , if a guys gone absolute ape over a girl she'll be all he thinks about in every waking moment at the start . He often won't want to see anyone or bother with anything else, can't concentrate on anything.
Yet she might show, say and feel just as strongly when your together but when she's not with you it's as if she's just normal. Maybe seeing friends in all her usual ways, going ahead with life or still hours on the phone, still all rhe time in the world for anyone one or thing that pops up .
Sometimes it's almost as if she has a switch .
Or they get home from work or school - totally warn out , next minute phone rings and they'll be on it for hrs laughing, talking as fresh as. I can't do it if I'm that tired.
Of course it's "normal." The media is crazy. But then again, so are us females. So I suppose you can never really tell :)
Everybody has a different definition for beautiful. I think that yes, there are women out there who don't go for the usual muscular brute, but instead for a different specimen.
So I've never dated a muscle man, but who's to say that the girl is shallow for dating one? Maybe she actually likes the boy for both his personality AND good looks.
