At first she said it was "just sex" and "not a big deal" Now she's clingy and telling everyone that i'm her boyfriend. I plan on meeting up with her this weekend and go all out before I put an end to this nonsense.
It's normal for a girl to think after 'doing it' that you two are 'together' but you shouldn't have sex with her again and then end it like that. That's just piggish.
Tell her you're not her boyfriend and DON'T have sex with her again or that'll just encourage her to think you're still "going out".
You are obviously not old enough to know women at all. A woman who only wants sex is rare like a needle in a hay stack. If you do not care for her then don't have sex with her again, you cannot be that desperate to take advantage of someone who you know has feelings for you. Explain to her the best you can and move on.
