Is it normal to not understand being just friends?

I've been friends with a girl for about 8 months now. We started off with a romantic relationship, but moved too fast. After about a week (yes, a week) of us seeing each other, I decided that I no longer wanted her in that way. Ever since, she seems to want more than a friendship, even after countless conversations about being just friends. She's an awesome person, and I don't want to remove her from my life completely, but she keeps coming on to me, and I'm nowhere near interested. Is it normal that she doesn't understand that I want nothing more than friendship?

    Normal. There's no being friends if one of the parties still wants more than that. The rejecter is the only one who can be "friends" with the rejectee. The later will ALWAYS be hoping for more. Even if they say otherwise.

    But what do I know, I'm just a drunk cook.
