There are heaps of reasons. For example, he may be intrigued with your personality and want to use it as a basis for a fictional character in a book or comic strip he is planning to write.
I tend to remember everything. Most people don't though but will to a higher degree about people they care about, but it's not always that kind of care.
Are you certain he doesn't like you like that? If you aren't, it's probable that he does.
Yes I grew up with this guy that had insanely good memory he would remember random shit like a pair of shoes I had when we were 3. He would always be like "u remember when..."
Someone noticing stuff about you doesn't really mean much on it's own. We need more context.
It could be that he does actually have feelings for you but won't admit it, or it could be that he just notices stuff about you and everyone else he knows and it means nothing.
