Is it normal my gf borrowed money from her ex to pay a debt before telling me and she's considering accepting a side job that he wants to offer her, simply because she's earning a low income and I'm also not financially stable and she needed money to take care of a lot of things. Is that the best solution?

    Yeah, this sounds like a disaster in the making. You should both get a second job or find better ones that pay more.

    I think it would be more appropriate for her to ask for financial help from her parents. I also think you might want a improve your financial situation in line with what Cuntsiclestick stick has suggested.

    Including an ex in financial matters is always trouble. The fact that she didn't talk to you beforehand is an unhealthy sign. You guys would benefit from communicating more.
