Somehow, whenever I first meet a girl she always manages to bring up her boyfriend within five minutes. As if to tell me, "I'm not available."Even if I have no ulterior intentions.
It happens way too often to be a coincidence.

Many women get hit on a lot. So its probably a defense mechanism so people know that they are taken. If you only wanna be friends or just talk to them then say so and it might calm their nerves.
I find it sad that I have to calm someone's nerves before carrying a conversation with them. Does being of the opposite sex automatically label you as a hunter?
You seem to be attaching loads of complicated, sinister connotations to a very simple, non-sinister event. No-one is seeing you as a "hunter". Those women are just finding an indirect way to assert a boundary, not because they presume you want to date them but *just in case* you do.
It all depends on the woman and their experiences. Some women are so faithful they dont even wanna talk to other men, some are scared to talk to other men due to an abusive relationship, some dont wanna be bothered, some like to talk to anyone, everyone has their own reasons. If I was the OP I wouldnt take it personally. Just roll with it.

So what? They're just looking to avoid an awkward situation. It's not that they assume that you're hitting on them, it's that they want to cover themselves just in case that you are.
Maybe they're just making conversation and don't even think you like them because they only view you as a friend?

I dunno, are you doing anything to give them the impression that you're hitting on them? For instance it's great to have good eye contact when you talk to someone, but don't lock a person's gaze too hard. Don't stand too close to them or touch them. I'm not accusing you of anything I'm just encouraging you to be mindful of body language. Sometimes when we're nervous or awkward we do creepy things without realizing it.
You know what they say, "if one person tells you you have a tail don't worry about it, but if ten people tell you that you have a tail you might want to take a look back there."
Then again you could be paranoid and maybe its nothing. It's hard to judge any of this from just a written post without seeing you in action.
You can think of it as a 'honeymoon' stage.
Although some people just love to just gush about their special someone.
