Piano, even though I can already play piano. Just not perfectly.

I would play the bagpipe while random birds, hobos, and nerds were breakdancing in the background with an old lady with a jetpack firing her lazer. Yes, I have thought about this before.
I would love to play most of what is on your list and some others that aren't.
Ocarina all the way, but only if it has all the sounds from Zelda. Otherwise, it's the piano.

I chose organ because I have an electronic one, but I can't play it. Wish I could.
Piano, especially if you were able to compose on it as well. I've always thought of piano as the "pure instrument" (which I'm sure is in truth nonsense, by the way) because of all the theory and the two-handed nature of it: with one hand playing the bass notes and the other playing the treble notes it's twice the complexity of a necked instrument which the player can usually only use play either bass melodies or treble melodies at one time (unless, for example on a guitar, you count techniques like two-hand tapping on the neck, which in turn limits ability to play chords) (yes, that was one, long, run-on sentence). It's the reason a popular band featuring a piano as the main instrument only needs one pianist, but a band featuring a guitar as the main instrument usually needs a lead guitarist, a rhythm guitarist and a bass guitarist.
After learning piano I imagine learning other instruments would become easier because all the theory is already nailed down. Then I'd use that knowledge to learn classical and rock guitar, then violin and then a wind or brass instrument. I'd earn my money by teaching and playing music ^_^
The only instrument I own is a Keyboard. I don't know how to play it very well, I haven't had it that long. So it would be cool to pick the skill up without practicing because then I'd actually be able to use the skill. I *love* the sound of a Harp and would love to be able to play it, but what would be point? I don't think I've ever actually even seen a harp before, never mind been in a situation where I could play one. It would be a bit of a wasted skill, I guess.
I was going to say piano, but now that I think of it, I would love to play violin.
I love the way sitars sound. I think it would be a challenge to learn but a worthwhile instrument to put in the effort for.
