Sometimes when I wipe after a poop, somehow I miss and get poop on my thumb or finger. Is that really bad? The thing is, even after I wash my thumb, it still stinks. And I wonder about the safety of that when I'm chopping onions and preparing the dinner...

Use an antibacterial soap when you wash your hands! Work up a good lather and make sure to clean under your fingernails.
Don't worry about it mankind has been eating bits of poop stuck on fingers and nails since the beginning of time, it's character building.
How does that even happen?. You've been wiping your butt for how many years and you still can't do it right?.
I hope you do not work in the food industry. How do you not figure out how to properly wash your hands? Use soap and hot water and wash for at least 30 seconds. That is just standard too. If you have crap on your hands it requires longer washing and use a couple coats of soap. Repeat process.
