    What's the difference between 'I don't know' and 'I wouldn't know'?

Technically, I guess, it's the difference between "do not" and "would not". "Do not" talks only about the truth of a situation; you either know something or you don't. "Would not" talks about either your choice or opportunity to know; whether you'd want to know or not, or whether it was even possible for you to know or not.

I could be analysing that too deeply, though, because in the context of this question, I think they mean the same thing too. ;)

  • to make ricotta cheese you snap off a fig branch and stir the hot milk, it sets it like rennet

Also, if you're getting the pizza from a shop or a chain, most likely it's not going to be vegetarian. The best bet is to either find a reputable vegan company or make the pizza your self.

Most cheese contains rennet. Whether it's vegan or not is hard to say. If it doesn't say so on the package than it probably isn't the case or you could always call up the company.

Yes, most mozzarella on pizzas contains rennet. However, whether the rennet comes from animal sources depends on what country you live in. In much of the world, the rennet still comes from animal sources. In North America, the rennet is usually extracted from genetically modified bacteria because it's cheaper.

As a European vegetarian who loves cheese almost as much as life itself, I have a running battle with rennet and often have to settle on a "best efforts" basis for vegetarianism. It's not a great position.

If you're interested, making your own mozzarella is actually pretty simple. You can do it in half an hour. Making pizza dough isn't too hard either. I still maintain that the best pizza I've ever tasted is one I made myself a few years ago. If I had time, I'd always make my own.
