I'm a gay guy and do this nearly all the time and it might just be because I go to a school that is at least 95% straight, but its very frustrating. It could be a guy that I know for a fact is completely straight or even kinda douchey. If you are gay, bi, or pan; do you do the same thing?

I don't see how it's different from falling for anyone else who doesn't reciprocate. Happens all the time.
I wouldn't say fall but sometimes mild crushes I guess. But for whatever reason girls seem to be a little more heteroflexible than guys so its not always a lost cause. :)
I really doubt that your school or any school is 95% straight. Just think of some of the options sexually; bi, straight, gay, trans and curious.....curious being the big one. My guess is that a third of the people are open minded enough to have a same sex experiment in the right situation. May even be more than a third. So, look around and treat everyone the same regardless of their gender and you might be surprised. Freaking labels and fear of getting caught are the problem. All this is going away but will take time.
I did this quite a few times when I was questioning my sexuality way way back (I'm a woman) and saw it as practice for the real thing, much as teenagers have crushes on unattainable pop stars. It's also safer than falling for someone who may reciprocate.
I've had a few crushes on straight gals before. One can't help what they see as pretty.
Nearly half of all people have sexual encounters with a person of the same gender at some point during their lives (mostly experimenting youths), so "95% straight" is surely an exaggeration. But it is for that very reason that LGB people tend to gather in groups and things like gay bars exists, so there is no confusion between sexual interests when meeting other people.
