I spent many recess hours playing hand games. I remember Miss suzie and Mary Mack, but not the others. One not listed that comes to mind is "Down By the Banks of the Hanky Panky."
Miss suzie had a steamboat the steamboat had a bell miss suzie went to heaven the steamboat went to hell-o operator give me number nine and if you disconnect me i'll get you from behind-the frigerator there wasna piece of glass miss suzie sat upon it and cut her little azz the boys are in the bathroom zipping up there flies the sonething something blah blah...miss suzie and her boyfriend are kissing in the dark darker then the ocean darker than the sea darker than the underwear my mother put on meeeee. End
Well, it's not really a "handshake", but my childhood gal pals and I would do kinda a mix of lots of rhymes.
It went something like this:
I went downtown to see Charlie Brown.
He gave me a nickel, so I bought me a pickle.
The pickle was sour, so I bought me a flower.
The flower was dead, so this is what I said.

Yeah, there were a bunch of hand stuff to go with that, but I don't think I could type it up.
I also remember ABC hit it and Boom Snap Clap.
Anyway, from your list, I remember double-double this-this double-double that-that.
I remember Miss Mary Mack. There were some other ones like "On The Planet Mars", one about Mother getting shot by the FBI, and another one that had a lot of pseudo-clapping and hand rubbing.
I played Miss Mary Mack, On The Planet Mars and something else that had to do with snapping and clapping hands in various directions.
