She compacts the garbage with her hands and wears the same plastic gloves all day, even when she's on bathroom duty. The toilets and floors get wiped with the same gloves that she prepares sandwiches with. My boss knows this and hasn't said anything to her. Should I care? I told my friends and family not to eat here.

I would confront your coworker personally about the issue. With something along the lines “do you really use the same gloves to make food as you clean toilets?”
And if your boss doesn’t take hygiene seriously I’d work elsewhere.

If your boss really knows about this and doesn't care, he's as big an idiot as her.
Is your boss the owner? If so, that's doubly stupid, since any outbreak of illness that's traced back to his restaurant would have a huge impact on his finances.
If your boss is managing the place for some corporation or an absentee owner, maybe there's a way you can anonymously raise your concerns with them.
