You don't become either, I believe. I know you don't become an angel in religious belief, but not as sure about the demon thing.
Either way, I would choose to be an angel. I could fly, I would have amazing power, I would look good, and hey, I'd glow...Wait...Twilight comparisson. Demon it is.

I like the idea of the pure, white, beautiful, scorching, and vicious power associated with angels and also the idea of stony and cold perfection.

Considering Angels do all of gods killing and dirty work, I'd say there isn't a big difference.
Angels would be more frightening.
I'd rather be neither and remain as a human.
But I've always wondered what the angelic mindset is like. Do they feel as we do? Experience anger, remorse, jealousy etc? Do they need what we need and react as we react? Or would they find the concept of things like companionship a strange thing?
In gaining insight to the character of others, people make the mistake of viewing them through the lens of what they would do.
It could be that the angelic being is so outside the human experience, that the reality of it can't fit through the windows of our mind.
Angel because I could fly. Besides, there's no air conditioning in hell and who wants to go around pricking people with a pitchfork?
