Is it normal that my thick, curly hair looks and feels thin when straight?

I have naturally curly (between curly and wavy, so not super curly) hair that is made up of small strands, but a ton of them. When it is left alone, it looks and feels very thick. I've been told my entire life that my hair is very thick, even when it was long and much straighter.

However, when I flat iron my hair, to me it feels dead thin, flat, and limp. It also looks very thin to me. It literally feels as if someone took thinning shears to it and over-thinned it. The top half doesn't look that thin, but the lower half looks so stringy to me.
