It is more comfortable to do that and it provides a quick means of protection should the need arise. It is easier to block an attacker or to shove your woman out of danger if you are not tangled up around their waist or holding their hand, which might have a death grip on your hand in an emergency. It depends on the cowboy. Some ride bulls and some ride broncs. But they are still both cowboys.
That hasn't been my experience. It probably depends on the guy. Maybe the über redneck types do that more?
