Of the ones listed I would have said deNiro but he's made such atrocious films for the past ten years that it's difficult to take him seriously. I sincerely hope it's because nobody is making good films any more, rather than he's deliberately making poor choices because they pay well.
From what I've seen, Christian Bale does pretty good work, but I've not seen a lot of it. Struggled to warm to Daniel Craig until I recently watched Layer Cake. I was convinced I was going to hate the film and avoided it for years. Stupid me, of course. The film is fantastic and Daniel Craig is really really good in it.
Outside of the people listed, I'll watch anything with Jimmy Stewart in it. I quite like John Wayne, Audrey Hepburn, Richard Dreyfuss, Ingrid Bergman, Robert Shaw, Humphrey Bogart, Robert Redford, Madeleine Stowe, Paul Newman, George Clooney and (you listed these) Bruce Willis, Samuel L. Jackson and Brad Pitt. Which goes to explain why I like The Man Who Shot Liberty Valance, The Sting, Jaws, Butch Cassidy and the Sundance Kid, Twelve Monkeys, and Pulp Fiction. They all have more than one of my favourite actors in.
Of the lesser known actors, I'm a big fan of Charlotte Gainsbourg, Stellan Skarsgård, Charles Grodin, Mary Stuart Masterson, Emily Watson, Mandy Patinkin, Maury Chaykin, J. T. Walsh, James Spader, Charles Durning, Kelly MacDonald, Emily Woof, Katrin Cartlidge.
