It used to be a favorite but I haven't had it much in the past 15 or 20 years. I kinda quit eating pasta a while back. Tried it with zucchini noodles but I didn't like it.
Eggplant lasagna is a much better option than zucchini, providing you like eggplant, of course. BTW, I think cauliflower as a substitute for pasta and dough is better than zucchini, like on pizza crust.
Do it then!! I'm sure you'll love them both. The cauliflower has less water than the zucchini, but you still have to remove excess water. The eggplant is fab for the lasagna. Although I prefer to have it breaded and fried before assembling it, IT is also good on its own - but I'd recommend getting at least a little char on it (the slices) first.

I have some eggplants growing in my garden, so I'll try that! I do like cauliflower rice, I haven't had it as a pizza crust yet though.
