  • It used to be a favorite but I haven't had it much in the past 15 or 20 years. I kinda quit eating pasta a while back. Tried it with zucchini noodles but I didn't like it.

    • Eggplant lasagna is a much better option than zucchini, providing you like eggplant, of course. BTW, I think cauliflower as a substitute for pasta and dough is better than zucchini, like on pizza crust.

      • I have some eggplants growing in my garden, so I'll try that! I do like cauliflower rice, I haven't had it as a pizza crust yet though.

        • Do it then!! I'm sure you'll love them both. The cauliflower has less water than the zucchini, but you still have to remove excess water. The eggplant is fab for the lasagna. Although I prefer to have it breaded and fried before assembling it, IT is also good on its own - but I'd recommend getting at least a little char on it (the slices) first.
