It's a toss-up between Jeff and Pierce. I love how Pierce can be blunt and honest where others prefer to keep up appearances and avoid confrontation. He's my special 'amigo'. Jeff is your stereotypical cool guy who cares about the group just enough not to get booted. Other notable characters besides obviously Chang to me are the Dean and Vice Dean Robert.
