Personally, I hate it when someone DOES say, "Bless you" when I sneeze. Why do I need to be "blessed" when all I did was sneeze? A normal body function. Supposedly, it began long ago when stupid people though that a sneeze was evil spirits trying to leave your body. I think we're beyond that now.
Agreed. I hate when you feel somehow obligated to say 'Thank you' after somebody 'blesses you' for sneezing. Thanks. Thanks for blessing my projectile snot.
Very bizarre tradition. Hopefully it'll die out with subsequent generations.

Actually nobody is certain where it originated from. The soul escaping and heart stopping stories are two of many suggested origins:

Personally I find the heart stopping story the least plausible. Probably a later American invention.
