Omg they're amazing & I could go on rants about their hyper intelligence & the fact that there are studies showing that octopuses can observe other octopuses solving puzzles and then solve them immediately, which illustrates a semblance of self awareness & the development of memory...it's insanely interesting.
But to answer your question, I would go with dumbo. Easy fight. I'd just bring him to the surface.
You left out cuttlefish though, those stealthy bastards.
I know right? Cephalopods are so cool! They're like the crows of the sea; they're the most intelligent animal that a lot of people wouldn't have expected to be super intelligent.
I really wanted to do cuttlefish as an option, but I didn't think the experience of actually fighting one would be too unique and I didn't wanna have more than five options. I guess I could've done the flamboyant cuttlefish because it's venomous, but I already had blue ringed octopus so I figured it'd be a little redundant.
I omitted the mimic octopus for the same reason. The way it imitates so many other animals is so cool, but if it's already locked in a fight to the death I don't think it'll be too different from fighting a normal octopus

You poll choices make sense now that you explain them. You should've put Humboldt squid aka diablo roja in though. Those bastards have killed tons of peoole by kamikaze bludgeoning them to death with their own bodies. I wouldn't want to fight those guys.
