It depends on the meat. I like to cook my steak in a butter/garlic/thyme mixture, and my chicken in a chicken broth/butter/garlic/rosemary mixture, so I don't use any other sauces with those.
I also like to cook both beef and pork roasts "Mississippi style" with butter, ranch dressing mix, au jus mix/French onion soup mix (au jus for beef and French onion for pork, though I've done au jus with pork and it's still good), and pepperoncinis. I don't use any additional sauce on those, either. Though, when I use the pork for tacos, I do like to top them with salsa (as well as cilantro, red/white onion, and a squeeze of lime juice).
For Buffalo wings, I like ranch, but only homemade or made with the seasoning mix, but not pre-made. I'd rather not have ranch at all than have pre-made ranch.
I used to like to eat sliced turkey with mustard as a kid as well.
If I go to Chick-fil-A and get their nuggets, I like to dip those in their Chick-fil-A sauce.
