Part of the nostalgia comes from the gaming side of YouTube. Namely from the gaming content creators who carried YouTube for a significant period of time. Many of them have quit YouTube outright, quit making gaming content, or no longer solely rely on gaming to run their channels.
Channels such as Markiplier and Jacksepticeye have improved. Massively. Some other channels have declined in quality.
Something worth mentioning is that the 2016-2018 era of YouTube was easily the worst of the platform's history. It forced channels to either rely on sponsorships/Patreon or become more family friendly. Often users would be demonetized for simply saying the word "Die". It wasn't Google's fault necessarily, it was advertisers panicking after the whole Pepsi ad situation.
Personally I find the incredibly early days of YouTube to be awful. 2012-2015 and 2019-2021 are good eras of YouTube content wise.
In late 2016, early 2017, Pepsi had purchased ad space on YouTube for an advertisement that immediately drew backlash. In said ad, Kendall Jenner used Pepsi to stop a dispute between the Police and Civil Rights Activists; by giving the Pepsi to the police.
The backlash from this ad was so large that Pepsi removed all ads from YouTube, claiming that the ads were being played on videos they found unsuitable to their brand. Other brands quickly followed Pepsi, telling YouTube that they would only come back to the platform if the content became more family friendly.
During 2016 and 2017 (As well as much of 2018.) the advertisements were so limited that it forced even the largest of content creators to seek other ways to make money. YouTube has only recently begun allowing swearing in videos again.
