It's because you never confessed and suppressed your emotions, so you're thoughts are going to be pledge by the "What if" and the daydreams that come with it, that will last for a while until you accept the choice you've made and move on.
Now, if you confess your feelings to her without expecting to date, getting over her might go faster, because if she shows disinterest in dating, then you can move on knowing it wouldn't have worked out. Now if you confess, and she likes to you too, then you got to grow some balls, learn to communicate your emotions properly (cause no one wants a partner who hides their emotions 24/7), and give your 100% best to the relationship; or you can refuse to date her by telling her everything you wrote here.
