That still doesn't take away from the customer choosing to patronise a business that mistreats their workers. Why is it ok for this specific work to be treated like that? Why don't all jobs get the same system? Why don't you and I have to rely on tips so that our employers can get away with paying us less than minimum wage? Because of our education? Ok...Well what about janitors, delivery drivers, cashiers, other "no skill" jobs?
You really puzzle me, sometimes. You can be so hardline and seemingly uncompassionate for someone so intelligent, sensible and usually reasonable and level headed.
I've been a waitress. It's not the greatest job in the world, but you always make minimum wage. If you want better wages, you get a second job or get a higher paying job. I've done both.
And speaking as a former waitress, I don't believe in tipping unless the person has done something above and beyond their normal paid duties to deserve it.

I do tip rarely only when they do something beyond what they are paid for
They deserve it
But not for thr services they are paid to do

Makes an excellent point.
A tip for a job well done is one thing.
A tip just for doing the bare minimum is something else.
