    But what is the "true them"? Why is that something for you to decide?

    Everyone behaves differently among different people. Even if you don't realize it. Most of it isn't even a conscious choice - they're not intentionally faking anything, that's just how behavior works.

      Did I say I decide it? Not so much how comfortable you are but how bad you change for someones interest.
