This does not sound like a normal treatment, and it's actually a bit disturbing.
There is nothing wrong with having an inner child. People shouldn't have to act mature all the time and should be able to express their inner child without being judged. I still like cartoons and games and wouldn't want to grow out of things I liked as a kid.
Infantism fetish is when an adult wants another adult to dress up as a toddler. So they can feed and change them. The person acting like a toddler also enjoys being treated like a baby and dressed in baby clothes. Its a type of fetish and is suppose to get sexual arousal from the participants.

Why can't she do EMDR on you, instead of this questionable request? As far as I know, "normal" EMDR doesn't entail this.
