I dont think he is doing it on purpose. I think when you pick him up you are either squeezing to hard or something it wrong with his stomach and he is bloated. So when you squeeze he farts. Check if he is bloated since it might be the food you are giving them. My animals had this issue when I fed them canned food. Why I stopped feeding it to them and there stomachs are not bloated and they fart a lot less. If they are not bloated you are probably picking them up the wrong way and putting pressure on their stomach and so they fart. He might be upset since he is uncomfortable. So it is either the strain of being stressed or the pressure of you pushing on his belly. It could be both though.
