you are 18 and legal, you already graduated, and you've already opened up to one another. I would say send him an email here or there. It might be too abrupt to just out and say "would you like to go out to dinner" but keep in friendly contact and give some subtle hints that youre interested.
He's single, a grown man, and a little less than twice your age. I cant say for certain but I'm guessing any grown man would jump at the chance to do anything with a young lady, especially if SHE was interested.
Just remember not to push ANYTHING on him, or try to get clingy and cuddly too fast or you might ruin your chance!
I have/had a crush on my teacher but he has a girlfriend and I have a boyfriend so I doubt anything would happen between us, but if I was in your position I would go for it.
