My guess is that it's because hangovers are caused at least in part by dehydration, and those soft drinks like Coke and Red Bull dehydrate you A LOT (the companies that make soft drinks design them to be dehydrating because it makes you more likely to buy a second drink), maybe even more than the alcohol does.
I'm with you on that. When I get together with my mates, I drink water too. I enjoy my alcoholic drinks, but make sure I get water. Next day - no hangover.
