I did know that. My father used to eat them when I was a kid. He also enjoyed tongue, but I could never get past the look of it. (Strangely, I liked liver as a kid, which I suppose is pretty weird.)
When it comes down to it, what we like and dislike is a cultural, learned thing. If I was literally starving and the only food available was pickled trotters and tongue, I'm sure I'd eat them.
Its it odd to be half vegetarian?
