But busy to the point were his weekends are off limits? The past 3 weekends he's been unavailable, if you have decided to date you make time, even if just coffee you put in some effort. All be wants to do is text me all weekend long and all week long, sending me selfies and only being available on Friday nights after work.

It's normal to be busy, but you know when someone is busy vs dodging you. I agree he might have a kid or something.
