No you're missing the point. Its not immature to think flat earthers are morons but it's immature to call them morons on your paper. He wants you to keep it logical and not emotional. He's trying to keep kids from becoming snowflakes unlike most professors who encourage that. Good man!
Instead of saying "Flat earthers are morons." You could have said "In my opinion, flat earthers are naive and bias, and the main reason I believe this is because they cherry pick their facts when it's convenient. An example of this is..." and then go to something like "Those are some reasons why flat earthers believe the way they do, but the problem with that is...." Something along those lines would be better because you're sticking to logic and not emotion. Also you're telling people that have never heard of flat earthers why someone would believe in flat earth and then you're telling them why YOU believe theyre wrong.
Joe Rogan is a person that's really good at this. He usually gives both sides of the argument validity and give his own opinion on why he believes what he does and then he will go back and say something like "they do have a point on this topic and this is kind of weird.". He gives you both sides of the argument where normally the media will give you one side of the argument. And people will then be wondering why flat earthers believe the way they do and they won't get that info from your writing. Also flat earthers rhat read your paper will immediately get defensive and not give your argument thought.

I mean yeah, for a more formal assignment like the actual paper I'm writing, I will bit be so direct and address more evidence that suggests the earth is round or whatever. It's just that when he told us to write our reactions, I didn't feel like that meant I should be providing a bunch if evidence as to why the earth isn't flat.

You're sounding like one of those lefty people that dont listen to facts and just say something like "Trump supporters are dumb" and then I could go on and tell them how Trumps policies could actually help people, and why he was the better candidate, and why smart people voted for him, I could make good points and then when they respond they say something like "I cant believe anyone would vote for him and his supporters are dumb". Its like talking to a brick wall. And it's really a bad problem now days especially with young people.
Its like they get mad because someone is challenging their opinions.
The earth being round is not an opinion. That's the disconnect here. Everything you said is true and I agree with as it applies to opinions.
If the shape of the earth can be an opinion, what else can? If something is that objective you can't get pissed at people for not stating it as just their opinion.
