I used to work 7pm to 9am two or three days a week and I can sympathise with you. I was living at home so still had to fit around family mealtimes. Waking up at 5pm and having a full Sunday lunch for breakfast was weird enough. So was everyone eating their breakfast the next day while I was having a beer and getting ready for bed.
Because I didn't do it five days a week, I never got into a routine like yours. But still, it was hard. I was always either hungry, overly full, or had indigestion and heartburn.
In your case, your regime of small, regular "meals" seems sensible to me. What I'm actually wondering, though, is whether you are thirsty. The body's signals for both hunger and thirst are easily confused. Especially if you're using coffee (a diuretic) to either stem hunger or to stay awake at strange hours.
I do a really physical job, so I tend to drink water throughout the day. Lately I've been drinking more caffeine than usual though, so that could be it. I'll have to make myself drink more water and see if that helps.
