I don't think it's unusual for someone to want to wait to date, however when you say you have always been mature for your age, keep in mind that there are different kinds of maturity.
If you're 19 now, you've never had a boyfriend, and you plan to wait until you're 25 so you can date someone older, I think you will encounter a lot of problems that result from your own immaturity. If you've never been in a relationship, never had to break up with someone, or never had to deal with issues like petty jealousy, you're probably going to be very annoying, frustrating, and undesirable to someone who has likely been in several long-term relationships, and a divorce or two.
That's why I think all those early relationships, even crushes and puppy love and those dates that didn't seem to mean anything are important. They give you the experience you need in maintaining a serious relationship when the time comes.
