I'm aware that carbs can cause water retention but in my case they cause me to gain fat also, even in incredibly small amounts.
I've never liked grains much anyway so they were easy to eliminate. I stick to low GI fruits and veggies, no milk but some cheese occasionally and nuts (sometimes peanut butter when I need something very sweet and substantial). And MEEEEEEAT!! Lots. I eat high fat, high protein and a good amount of veg and the calories make absolutely no difference. I do not gain an ounce unless I go over 35g of carbs. In fact I can lose weight that way (hi cal/lo carb)but even on a restricted calorie diet I will gain weight if it includes more than 35g of carbs. I've extensively tested this on myself safely, long term and with strict food journaling and it always comes back to the carbs.
Did it ever occur to you that you are using the calories you eat? It still comes down to science of nutrition, if you substitute out protein and fat and fill it with carbs, yes, you will gain weight with those empty calories. And if you add bread to the diet listed above, yes, you will gain weight unless you happen to be really active that day.
Your body isn't different in that aspect. As a society we eat far too many bad carbs and poor quality proteins and wonder why we get fat. Poor fat has been villainized when that isn't the problem. And now you are villainizing carbs...it is called balance. If you don't eat a balanced diet, your body will suffer. And sadly the average person has no concept of balance when it comes to food.

Low cal balanced diet with "normal" (not hi or lo) amount of carbs...I gain weight. Low cal low carb...I lose. Hi cal low carb...I maintain or lose. My activity level has no bearing on this. I get the same results with exact same activity level with each diet structure, every time.
I know fats aren't bad. I don't know where you got the idea that I didn't? I'm not villainizing carbs either. I am simply stating MY experience and how MY body reacts to carbs. I'm not saying it's how everybody is, just me...and asking if anyone else is like this.

Not all carbs are created equally. And i highly doubt it is visable to the eye. And you need to back off the scale. Being hyper aware has put you in denial. You need carbs to process fat. Too much or too little is unhealthy. Balance.
If two bananas truly make you visably fat, you may want to look into allergies. That swelling isn't normal. And if what you claim is actually true, you may have a thyroid condition. Which can be treated by eating the right kind of carbs, not avoiding them. Not all carbs are created equally, but you know that.
It's cumulative. I thought that was obvious enough to go without saying although I DID say "over time" in the previous post. Eating over 35g a day/carbs causes me to gain weight. I will not lose weight in calorie deficit if there is too much carbs. Can I say it yet another way?
Again, calories do not matter. It's the type of calories. I can eat 4000 calories of anything day after day and as long as it is virtually carb free I will not gain an ounce.
I do check my weight often, less now than I did when I was figuring all this out. Also I do not eat bananas!
