Cheese eating hillbillies? Since when is cheese a source of villainy? I am sorry but I can not take that insult seriously. It just sounds really funny. You eat cheese! You moron! You eat cheese! I love cheese and I am not from your area. I also find it hilarious since cheese comes from most parts of the world. They also like cheese with wine so I think the fact "You like cheese" means you are more sophisticated. You should go get some potatoes to go with that cheese of yours. If that all they can make fun of you should be happy. They could call you worse. Do not feel bad and all people have a stereotype for a area. I would catch them eating something with cheese in it and say "FUCK YOU HILLBILLY". You know just to be a dick about it. Just can not believe someone would think of such a stupid insult as "You eat cheese"! Who gives a bloody fuck that "You eat cheese"! That is like saying "You eat lettuce". Not really a big deal. They are probobly morons anyways.
