You're the one being insensitive to other cultures. Just because you don't celebrate Christmas, doesn't mean everybody who does should keep their mouths shut. If they assume you do too, they are only wishing you a happy one. Just in case you're too blind to realise it, that's a nice thing.
If a Hindu said happy Diwali to me I wouldn't be offended. If a Muslim wished me a happy Eid-ul-Fitr I wouldn't be offended. If a Mexican said Happy Día de Muertos to me, I wouldn't be offended.
In conclusion, it's a sad thing that something so harmless offends you.
