Those only serve to limit the chances and servers aren't required to wear hair nets or hats. Nothing is 100% when it comes to that. Even if you follow all the guidelines and such it's bound to happen. It's not even all that uncommon. I work at a restaurant and we catch hair in the food a few times a week before it's sent out, we also wear hats and the servers with long hair have their hair tied back. Hair in food sounds disgusting, but it's really no different than touching foods with bare hands which is allowed as long as the food in question will be heated to the correct temp afterwards.
