You're right, they don't. Hence Galileo's theory of relativity gets bettered by Einstein's theories of Special and General relativity.
Science says "I have an explanation (a theory) of how something works. Here is some empirical evidence which 'supports' my explanation"
Later science says "Behold, I have gathered more empirical evidence which does not fully support the old explanation. With this new evidence I now have a better explanation (theory) of how the thing works." ... etc ...

That's a type of agnosticism. Yes, some people think that way.
However, most religious people do not claim to be agnostic like that. That their faith in God is so wishy-washy.
