I understand you may respect her, and she must have her good points, but she is crossing the line. You should sit her down and explain to her that you appreciate all that she does for you, but you are young adult and her punishments are inappropriate for someone of your age. You are almost a legal adult, you should not have to endure punishments meant for five year olds.
Try to set rules, and punishments together. Example, suggest that if you stay out late, you'll have your cell phone or computer taken away.
