Originally they were used in psychological tests to determine a person's point of view. They found patterns in people who were psychologically/emotionally damaged automatically seeing violence/disturbing things in them. But it wasn't consistent enough really and they have been put out of use because it was proven that it is not an accurate judgement of a person's psychology because too many other things come into play.
As a side note, there's a cool character in the movie/graphic novel Watchmen, called Rorschach, where his mask is a constantly shifting Rorschach test.
