Just going on my fairly good knowledge of the psychology of human body language; echoing back the movement of another person is normal; whether they are interested in you or not has no impact. Try this in a conversation with almost anyone and you'll be likely to see them copy you, in theory. Also, crossed arms is a sign of being closed off from you, i.e. not interested.

Maybe you should make the first move. In a conversation with a guy you like, cross your arms, and if he crosses his too, he's probably interested!
