It depends on the person and how private he is, if a lot of his profile is fairly public and he has 100s of friends he will probably be adding people he doesn't know all that well, if it's all hidden and he only has a few friends (or his frinds list is hidden) he probably isn't adding people he doesn't know. Since you have actually met and worked with him (rather than just seen him around) it would probably be ok to send him a message to say hi and ask how he's going but it doesn't mean he will reply
If he does add you be aware of who else is on his profile, ie there might be things that are said at school but you wouldn't want to say in front of his parents.
