If she hasn't dated anyone else in the three years they've been divorced there's a good chance that she's been clinging to a hope that they might reconcile. If she has dated anyone else then she's just being a bitch.
Also consider the possibility that her problem is not so much with him finding a new wife, but with him deciding to marry a new woman after one week of dating and then expecting her to just hand her kids off to spend time with this new stepmom who is a stranger. As a mother it must be hard to just blindly trust her ex husband's judgement when handing her kids over to visit with someone that not only does she not know, but that even he doesn't know very well.
