One possible reason - besides those that other users mentioned - could be that she is just a very heavy sleeper, so that she doesn't wake up if she has to pee at night.
If - if! - that is the problem, the solution is quite easy. She would have to stop drinking any liquids after 7 p.m. This may take a while. From time to time she can test if the problem is still there. If it is, stop drinking after 7 again. Some day, the problem won't be there anymore and she'll be able to drink when- and whatever she wants.
I know of a person who had that and this method cured him. True story.
